Just wondering if we need to worry about the Heartbleed vulnerability in application like MySQL that we install from the Remi repositories? Are at-risk versions of OpenSSL used for your builds?

My builds use the base system openssl.
If you have updated your system for fixed openssl, there is no other risk.
