Is it possible to re-enable WebP support again? Or do I need to recompile PHP completely?

Also, I cannot test this at this time, but is WebP support enabled in the remi-php56 repo?

No, I don't plan to re-enable  WebP support as this introduce a very huge memory consumtion (~500MB per process).
This is not related to PHP (5.5 or 5.6) but to GD version.

As libvpx 1.3.0 is now available in rhel/centos 6 and 7 updates, I have re-enable WebP support in GD and php-gd.
(soon in the repo)
